One-tray sumac chicken with rice

Serves 6-8
8 chicken legs
2 tsp ground cumin
1.5 tsp cinnamon
3 tsp sumac
1 tsp sea salt
1 large onion, chopped into thick half-moons
4 carrots, chopped into batons
1 large clove garlic, finely chopped or grated
1-2 handful green pitted olives
300g basmati rice
2 tbsp extra virgin olive oil
700ml hot chicken stock
Method
Preheat the oven to 180°C (350°F).
Season the chicken legs with half the ground spices and salt in a bowl, then set aside.
Toss the chopped onion with a drizzle of olive oil in a large baking tray. Roast in the oven for 15 minutes until softened.
Add the carrots, garlic, the remaining spices, olives, rice, and olive oil to the tray. Pour in the hot chicken stock and stir everything together.
Nestle the seasoned chicken legs on top of the rice mixture.
Put the tray in the oven for 40-45 minutes until the chicken is browned and the rice is cooked.
Serve it with a fresh salad or steamed greens.
